Dim sum ( 點心) is a kind of Chinese Cantonese cuisine prepared as bite-sized morsels
traditionally served in bamboo baskets or on dainty plates.
They usually have savoury and
non savoury varieties to choose from and often served as breakfast or tea time snacks
together with Chinese tea to cleanse the palate. Having said that, some of the popular varieties that most of us will not miss on the dim sum table are Har Gao, Siu Mai, Cha Siu Bao ( barbecue pork buns) and Malaigao ( Chinese Sponge)
In this Sourdough Dim Sum Series, I will be introducing some of them that require leavening medium which I will be using the natural way to do the leavening, sourdough starter, to prepare Cha Siu Bao ( 叉燒包） and Malaigao （ 馬來糕 ）
Workshop learning outcome includes:
- Detail guidance on maintenance of sourdough starter.
- How to start a stiff sourdough starter to make baos.
- Hands on knowledge on mixing to steaming
- Preparing fillings for the baos
( with char siu recipe)
- Students will take home their final results
- Notes and an active starter to bring home to start off your dim sum recipe.
- Each students will bring home their final baked products.
